An unusual opportunity to hunt and learn how to cook with potentially five edible species of winter truffle that we have here on the South Downs; I will show you how to prepare and cook them despite some of these species having rather unpleasant odours in their raw state. These species are commonly eaten abroad and still considered a luxury delicacy when prepared correctly and knowing what other ingredients compliment them .
Hot T mesentericum truffle soup with truffle and good bread will be had for lunch along with a couple of other wild samples for you to taste like truffled eggs and local Sussex truffled cheese after the course. Menus available on request. Please state dietary requirements.
